Because you are so happy when you varnish.
You are being overwhelmed by fumes. This is dangerous.
Have the doors to the closet open, and run a large fan nearby while you are varnishing. Take breaks every 15 minutes.

You’re not supposed to varnish cedar. You sand it lightly to reactivate the cedar scent.
If you’ll read the label, it will promote a well ventilated area.
Obviously a closet is not a well ventilated area.
My experience has figured out how to setup a box or small portable fan to pull the fumes out. Nothing special, but if you can point it towards an open door or open area to disperse the fumes.
And as always, a mask with filters on it will greatly reduce your giddyness.

Probably because you are just so damned excited that your closet is going to be nice and shiny. Either that or because the varnish will keep the moths out of your closet.
